Our black cod steaks are flash-frozen and individually vacuum-sealed in 1/3 to 1/2 pound packages. They are approximately 1/2 inch thick and cook evenly on the grill.
Our vacuum-sealed frozen black cod steaks can be stored in your freezer for several months. Frozen black cod fillets portions can be thawed under refrigeration about 12 hours before preparation. The vacuum-sealed packages can also be ran under cold water to speed this up considerably.
About 1/3 to 1/2 pound per person is a good portion size when serving black cod. You might find that black cod is so good that you'll want to prepare extra just in case.

Black Cod is caught in Alaska's fixed gear fisheries using longlines and pots, and conducted under Individual Fishing Quota (IFQ) programs. The majority of caught black cod is distributed to Japanese markets.
